Method

  • step 1

    Heat 2 tbsp oil in a saucepan and fry the shallots gently until softened. Add the apples, half the cranberries, cranberry juice and sugar. Bring to a simmer and bubble for 10-15 minutes until saucy and the apples and cranberries have begun to dissolve and collapse.

    step 2

    Stir in the remaining cranberries and simmer for 5 minutes more until they are softening and bursting, but not mushy. Leave to cool before serving.
