Chorizo is a brilliant ingredient - you just need a little to add a hit of smoky, spiciness to dishes. Here it's used to flavour a rich, garlicky tomato sauce which is served with a thick fillet of grilled cod for a healthy, flavour-packed supper for two

- 1 clove garlicsliced
- 4 thin slices from the deli counter chorizocut into matchsticks
- a pinch dried chilli flakes
- 400g tin chopped tomatoes
- 2 thick skinless fillets cod or other sustainable white fish
- cooked to serve green beans

Heat 1 tbsp olive oil in a pan then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and simmer for 10 minutes until thickened, season. Meanwhile rub the fish with a little more oil, season and grill or steam until cooked through, about 4-6 minutes. Serve the fish with the sauce and green beans.
