  • 2 baby gem lettuce
    finely shredded
  • 2 spring onions
    very finely sliced
  • 200-250g white crabmeat
    or tinned
  • cayenne pepper
  • ½ lemon
  • 4 tbsp seafood sauce
    ready made
  • (from most supermarkets) caviar or onuga or salmon caviar

    Method

    • step 1

      Mix the lettuce and spring onions together in a bowl and season. Season the crabmeat with salt, a pinch of cayenne pepper and a squeeze of lemon juice.

    • step 2

      Layer the lettuce mix, crabmeat and seafood sauce in shot glasses and finish with a dusting of cayenne pepper and a small spoonful of caviar on top.

    • step 3

      Keep chilled. Serve with small forks or spoons.
