- 2 baby gem lettucefinely shredded
- 2 spring onionsvery finely sliced
- 200-250g white crabmeator tinned
- cayenne pepper
- ½ lemon
- 4 tbsp seafood sauceready made
- (from most supermarkets) caviar or onuga or salmon caviar
Method
step 1
Mix the lettuce and spring onions together in a bowl and season. Season the crabmeat with salt, a pinch of cayenne pepper and a squeeze of lemon juice.

Layer the lettuce mix, crabmeat and seafood sauce in shot glasses and finish with a dusting of cayenne pepper and a small spoonful of caviar on top.

Keep chilled. Serve with small forks or spoons.
