Purple sprouting broccoli in oyster sauce

Ingredients
- 400g purple sprouting broccoli, halved lengthways
- 2 tbsp vegetable oil
- 2 cloves garlic, crushed
- 1 red chilli, deseeded and finely chopped
- 2 tbsp oyster sauce
- 1½ tbsp light soy sauce
- ½ tsp caster sugar
- cooked rice, to serve
Method
- STEP 1
Cook the sprouting broccoli in a pan of lightly salted boiling water for 2 minutes, then drain well.
- STEP 2
Heat the oil in a large frying pan or wok, add the garlic and most of the chilli, and cook for 1 minute. Add the broccoli and cook for another 2-3 minutes, before adding the oyster sauce, soy sauce and sugar with 50ml of water. Toss and cook until the sauce reduces and starts to coat the broccoli. Tip onto a serving dish and sprinkle with a little more chilli, if you like. Serve with rice.
