  • 175g butter
    softened
  • 175g golden caster sugar
  • 3 eggs
  • a splash  vanilla
  •  140g self-raising flour
  • 85g  ground almonds
  • r 1/2 tsp baking powder
  • 2 tsp  matcha powder
  •  60ml  milk

    Method

    • step 1

      Heat the oven to 160C/fan 140C/gas 3. Cream the butter with the sugar until it is light and fluffy, beat in the eggs, one at a time. Add a splash of vanilla followed by the self-raising flour, almonds, baking powder and matcha powder followed by the milk and make sure everything is completely incorporated.

    • step 2

      Spoon the cake mix into into 8 mini oblong paper cases or a 900g buttered loaf tin and bake in a for 45-50 minutes (less for mini ones: check them after 20 minutes) or until a skewer comes out clean.
