
Chilli chicken and broccoli noodles

Our stir-fried chicken makes a speedy meal for two. Just add broccoli and noodles along with chilli flakes and soy sauce to create a fast weeknight winner in just 20 minutes.

- 1 onionsliced
- oil
- fillets 3 skinless boneless chicken thighquartered
- a big pinch chilli flakes
- 1 tbsp soy sauce
- 3 tsp brown sugar
- a pinch ground ginger
- 1-2 tbsp rice wine or white wine vinegar
- 1 head broccoliblanched
- 2 nests egg noodlescooked

Method
step 1
Fry the onion in a little oil until it starts to soften, then add the chicken and stir-fry for 2-3 minutes to brown. Add the chilli flakes, soy sauce, sugar, ground ginger and vinegar. Season well and keep cooking, tossing it all together until the chicken is coated and cooked through. Add the blanched broccoli and stir through the noodles.
