Thai is becoming more and more popular as a takeaway option as it has more fragrant flavours and lighter dishes. Pad Thai is a classic spicy noodle dish and is very popular street food in Thailand. Recreate your own at home with our easy 15 minute recipe.

- 125g medium rice noodles
- 1 clove garliccrushed
- 1 red chillifinely chopped
- 4 spring onionsfinely sliced
- for frying oil
- 150g large raw prawns
- 1 eggbeaten
- 2 tbsp sweet chilli sauce
- 2 tbsp fish sauce
- 2 tbsp lime juice
- 2 tbsp peanutsroasted and crushed
- a handful coriander leavesto serve
Method
step 1
Pour boiling water over the noodles, cover and leave until just cooked, then drain. Fry the garlic, chilli and spring onions in a little oil in a large frying pan or wok for 2 minutes, add the prawns and cook for another 2 minutes until pink. Add the egg, stirring quickly until it starts to scramble then throw in the noodles, sauces and lime juice and toss until the noodles are heated through. Divide between 2 plates and scatter with peanuts and coriander leaves.
