Our quick quinoa and black bean chilli is a really easy vegan one pot. Make it along with some of our other vegan recipes and create a healthy and vibrant spread to really impressive your friends, vegan and non-vegan.

  • 1 onion
    chopped
  • 2 cloves garlic
    crushed
  • 1 red chilli
    chopped
  • olive oil spray
  • 2 tsp ground cumin
  • 1 tsp hot smoked paprika
  • 1/2 tsp (optional) chilli powder
  • 200g quinoa
    rinsed and drained
  • 600ml vegetable stock
  • 400g tin chopped tomatoes
  • 400g tin black beans
    rinsed and drained
  • 1 small avocado
    sliced
  • coriander leaves
    to serve

Method

  • step 1

    Fry the onion, garlic and red chilli in a spray of olive oil until soft, then add the spices, including chilli powder if you like it spicy. Tip in the quinoa, stock, tomatoes and black beans, and season well. Cover and simmer for 30 minutes until the quinoa is tender and the sauce has thickened. Top with a few avocado slices and coriander leaves to serve.

Really nice. Halved recipe to 2 people. Used 1 veg knorr cube and out of making it up to 400 ml despite box advice to use 450 ml, I then used 300 ml (but added a tad more towards the end to ensure the quinoa was done; but meal tasted a bit too strong so next time will dilute the cube using 450 ml,…

I've made this chilli so many times and every time I'm so surprised how creamy it is even though it's a vegan recipe. So nutritious and comforting!
