
Shredded turkey quesadillas

An easy way to use up any turkey leftovers, these turkey quesadillas are delicious and couldn't be easier to make for a lunch or snack. Add fresh coriander, red onion, tomato and chilli, grate over some cheese and cook until warmed through

- ½ a small bunch corianderchopped
- 1 red chillifinely chopped
- 2 tomatoeschopped
- 150g cooked turkeyshredded
- 100g mozzarella, cheddar (or a mix of the two)grated
- 4 flour tortillas

Method
step 1
Mix all the ingredients except the tortillas and season. Lay out the four tortillas and divide the mix between them, spreading it over one half of the tortilla. Fold over and press down. Heat a griddle or frying pan then cook on both sides. Cut into wedges to serve.
