- 2 tbsp sugar
- 4 tbsp mirin
- 250g chicken thigh filletscut into 2cm chunks
- 3 fat ones spring onionscut into 2cm chunks

Method
step 1
Soak wooden skewers in water for 15 minutes (or use metal ones). Mix the miso, sugar and mirin until the sugar dissolves. Thread the chicken and onions alternately onto skewers.
step 2
Brush the skewers with some of the sauce, then grill until cooked through, brushing with more sauce as you go.
