Japanese-born Angelo Sato is chef-owner of Humble Chicken, a Soho-based restaurant which focuses on grilling every part of the bird over charcoal. Angelo worked at several yakitori joints as a teenager and spent six months at a yakitori restaurant in Fukuoka. He has experience at some of the world's most decorated restaurants, including Narisawa and RyuGin in Tokyo, Eleven Madison Park in New York, and Restaurant Gordon Ramsay and Restaurant Story in London, where he was head chef. Angelo has also launched two casual takeaway and delivery concepts – katsu sando brand Yatai and sushi bowl specialist Omoide.
