Costas Spiliadis is chef/owner of Estiatorio Milos, a Greek seafood restaurant that has branches worldwide, including Athens, New York, London and Miami. Costas was born in Patras, a port city near the ancient Greek village of Olympia. He moved to New York in 1966 to study and opened his first restaurant in 1979.
