Brought up in London by his Italian father and Chinese-Singaporean mother, Edoardo was surrounded by the world of food from an early age. He moved from Rome to London to complete a three-year Professional Chef Diploma course at Westminster Kingsway College, graduating in 2011. Edoardo gained experience at Noma as part of the research and
development team, as well as working at Michelin-starred Italian restaurant Locanda Locatelli and Nuno Mendes’ Viajante, quickly progressing through the ranks to become Head Chef at Michelin-starred modern European restaurant Portland on Great Portland Street. He joined the Mãos opening team as Head Chef in 2018 and was promoted to Executive Chef the following year.
