Ian warren and his father Philip are the founders of Cornish family butchers, Philip Warren & Son. They supply some of the country’s best restaurants, including BRAT, Paul Ainsworth at No 6 and Smokestak. In addition to running its own farms, the company runs a network of 120 partnerships with farms across the region, one being run by Philip’s daughter Ria and her husband Martin. It’s keen on encouraging farmers to rear indigenous Cornish cattle such as Red Devons, Galloways and Dexters, and is passionate about grass-fed (rather than grain) and dry-ageing, with its ethos being ‘flavour over efficiency’.
