Pablo Diaz
Pablo Díaz is the chef owner of two restaurants in Guatemala, Mercado 24 and Dora La Tostadora. He has been featured in Conde Nast Traveller and The New York Times and has hosted a residency at Carousel in London as part of a Latin American series. Pablo’s motto is “No hay caviar, pero hay maíz” (we don’t do caviar, but we do do corn).
