Tommy Banks is chef-director at The Black Swan at Oldstead and Roots York. The Yorkshire-born chef started his career in food when his parents bought The Black Swan, a country pub in the north of the county. He became head chef in 2013 and is known for his imaginative use of home-grown and foraged ingredients, inspired by his farming background, as well as preserving. At 24, he was the youngest chef in the UK to hold a Michelin star. Tommy has also appeared on the BBC’s Great British Menu.
