Lassi is the milkshake of the Indian subcontinent. Creamily nourishing, it’s also thirst-quenching. Typically a choice of sweet or salted plain lassi is offered.

- 500ml plain yogurt
- 100ml raw milk, organic milk or waterice cold
- 2-3 tbsp rapadura sugar or dark brown soft sugar
- a pinch ground cardamom
- finely chopped pistachios or almondsto serve
Method

Put the yogurt, water or milk, sugar and cardamom in a blender and blitz for 1 minute. Add a couple of ice cubes and process for another minute. Serve with a sprinkling of pistachios or almonds.
