Spring is a season of freshness, both in the air and in the mind. It’s a time of growth, renewal and the promise of warmer days ahead, much like the comfort of a great cup of coffee. Spring trends include floral aromas, delicate sweetness and vibrant flavours which aren’t just found in blooming gardens but also in our coffee. Lighter filter brews are the perfect way to highlight these nuances. Unlike espresso, which tends to emphasise body and intensity, filter brewing methods bring out a coffee's more intricate, delicate flavours. Think cold brew infused with honey, a jasmine-steeped filter coffee or a floral lavender pour over, offering a refined and bright way to welcome in the new season. But spring isn’t all about lightness, especially in the UK. Cosy coffees with a splash of Irish cream, maple and cardamom pour over made buttery with oat milk or a spiced dirty chai can really hit the spot, too.

Spring can be a time for new habits, including movement, so make sure you're prepared with good coffee beans at home and a blender (my avocado iced smoothie is perfect for pre- or post-gym workouts). And for a taste of spring in a glass, there’s a special margarita sunset in my book Coffee Creations that perfectly captures the season’s essence with the lightness of tequila, sweetness of agave and subtlety of coffee that floats on top of the drink like the sun. Plus, it's adorned with flowers to give a spring vibe. I've noticed lavender and matcha are two ingredients that are really vibing this spring, while brewing with cascara (the outer shell of the coffee cherry) makes a tea-like drink that is deliciously sweet and aromatic as seen here.

Happy brewing!

This season, lighter, effervescent flavours take centre stage, with subtle traces of winter’s spices lingering in the background. It’s the perfect time to explore specialty beans through a pour-over, bringing out the intricate floral and fruity nuances in every cup.
