What is gnocchi?
Gnocchi is a form of dumpling in Italian cuisine – essentially small lumps of dough, made by combining wheat flour with egg, salt and potato. Gnocchi is usually cooked in salted boiling water, then tossed with sauces and accompaniments, such as melted butter and fried sage or pesto. In Italy, gnocchi is commonly served as a first course (primo piatto), an alternative to soup or pasta, or as a side dish to a main course. You can find gnocchi in stores, either refrigerated, dried or frozen, though it can also be homemade.
