What is xanthan gum?

Xanthan gum is a powder that is used to thicken, bind and stabilise foods. It is especially used in gluten-free baking as it acts as a stabiliser to create a cake-like crumb, and is also included in some sauces and dressings to stop ingredients separating. Flavourless, its effects are mainly textural.
