- 150g self-raising flour
- ½ tsp baking powder
- 200ml milk
- 3 eggs
- ½ a small bunch chivesfinely chopped
- 2 sausages
- 1 vine tomatohalved
- 4 portobellini mushrooms
- a drizzle olive oilplus extra for frying
- 4 rashers streaky bacon
- 2 tbsp soft cheese
- chilli or bacon jamto serve

Method
step 1
Whisk the flour, baking powder and a pinch of salt in a large bowl until well mixed. Add the milk and crack in one of the eggs. Whisk until smooth, then fold in half the chives.

Heat the grill to medium-high. Put the sausages, tomato halves and mushrooms under the grill. Season the mushrooms and tomatoes, and drizzle with a little oil. Cook for 10-15 minutes, turning a couple of times, adding the bacon after 5 minutes. Grill until the sausages and bacon are golden and cooked through, and the tomato and mushrooms are tender. Remove from the grill when done.

Meanwhile, heat a little oil in a non-stick frying pan and fry spoonfuls of batter until golden. Flip and cook for another few minutes until golden on both sides. Poach the other two eggs.

Serve the pancakes stacked with the soft cheese, a poached egg, sausage, bacon, mushrooms and tomato. Scatter with the remaining chives and a dollop of bacon or chilli jam.
