1. Cut your pomegranate in half along its circumference.
2. Taking one half at a time, and working over a bowl, squeeze the fruit to loosen the seeds.
3. Bash the top of the pomegranate with a wooden spoon to release all the seeds.

QUINOA, HERB AND POMEGRANATE SALAD
20 minutes, serves 2, easy
quinoa 150g
vegetable stock cube ½
pine nuts 75g
pomegranate 1, seeds removed
mint a small handful, chopped
coriander a small handful, chopped
lime 1, juiced
extra-virgin olive oil

Cook the quinoa according to pack instructions adding the vegetable stock cube to the cooking water. Leave to cool, then break up with a fork.

Meanwhile, toast the pine nuts in a dry frying pan until lightly golden. Mix the pine nuts, pomegranate seeds, herbs, lime juice and 4 tbsp oil through the quinoa.
