Step-by-step guide: how to segment an orange
1. Remove the orange peel entirely (you can watch our how to peel an orange video here).
2. Working carefully and using a sharp knife, separate the orange into segments. Remember to leave the white membrane between each segment behind.

GRILLED MACKEREL WITH ORANGE SALAD
20 minutes, serves 2, easy
new potatoes 200g
mackerel 2
olive oil
oranges 2, segmented
red onion ½ small, sliced
rocket 2 handfuls
sherry vinegar 1 tbsp
step 1
Steam or boil the new potatoes until tender, for about 15-20 minutes. Meanwhile, brush each mackerel all over with 1 tsp oil, season well then grill for 3-4 minutes each side or until cooked through. Toss the orange, onion, rocket and potatoes together and then drizzle with the vinegar and 1 tbsp olive oil. Serve the mackerel with the salad.
