Tortellini in brodo with pesto
This recipe for tortellini in brodo with pesto is super-quick and easy to make but packs in lots of flavour. It's perfect for a midweek meal.
Heat 1 tbsp of oil in a pan. Break up the sausagemeat and cook until golden all over, breaking up into smaller pieces as it cooks. Stir in the chilli and fennel, and cook for 1 min, then stir in the leeks and cook until softened. Add the garlic and cook for 1 min, then stir in the paprika and stock, and bring to a simmer. Add the broccoli and cook for 2 mins, then add the tortellini and cook gently following pack instructions until just cooked.
Serve in bowls with a little sprinkle of parmesan, if you like.
