Mýse, Hovingham, North Yorkshire
Pronounced ‘meeze’ and named after the Anglo-Saxon word for ‘eating at the table’, this Michelin-starred, rural gem is a harmonious blend of heritage and modern. Chef Josh Overington claims to make “elevated granny food” which, frankly, does a disservice to his intelligent, technique-heavy approach. The tasting menu is served dinner party style in a bright, minimalist dining room with botanical finishes. There are 16 covers and dishes are brought to tables in unison by the calm, methodical kitchen team. There’s an emphasis on pickles, preserves and ferments, as well as traditional methods and a razor-sharp focus on provenance. There are memorable, talking-point dishes at every turn, including scallop in sea urchin butter and colostrum curd tart. This is cerebral, exacting, original cooking, demonstrating such ingenuity as jerusalem artichoke ice cream with crispy skins and birch syrup tapped from local trees – presented in a birchwood bowl hand-carved by the chef. The attention to detail is mirrored in the wine pairings, curated by sommelier Victoria Overington in collaboration with Noble Rot. One of the pairings is a cider pressed nearby into only 48 bottles. The team are warm, knowledgeable and personable, without being overly formal.
After enjoying 15 remarkable dishes, guests can drift a short distance to rooms above the restaurant, or through the village to the newly refurbished Mýse cottage. The accommodation is airy but cosy and full of natural materials – sensitively modernised old Yorkshire. The breakfast is a masterstroke. It’s presented elegantly on the table in delicate elements – pâté and potted fish, home-cured charcuterie, barley porridge and a Burford Brown boiled to serve. Nest Farmhouse, Norfolk
Set on a working farm, this restaurant with rooms is neatly separated from the action so there’s no risk of muddy footprints in its artfully simple dining room. Not that it’s uptight – expect big, rustic dishes on its seasonal menu: bone marrow on focaccia; osso buco with turnip mash, salsa verde and horseradish; crisp garlic potatoes; and doughnuts with pumpkin caramel and nutmeg custard. Local suppliers, including Brancaster Seafood Co and biodynamic veg grown at West Lexham are proudly namechecked, as are wines from nearby vineyard Cobble Hill and stout from Woodforde’s Brewery, a key ingredient in its deliciously dark soda bread. The Cornish Arms, St Merryn, Cornwall
Rick Stein’s polished rural gastropub has everything you need: St Austell Brewery ales (try the Proper Job), roaring fires, wood-fired pizza in the garden in summer and cracking Sunday roasts year round. The Angel at Hetton
Amidst the rugged landscape of the Dales, The Angel is a polished gem of Yorkshire hospitality and remarkable food. The bar and restaurant weave through a series of beautifully-finished and intimate spaces on the ground floor of the Main house. Upstairs, rooms enjoy the same impeccable finish and views over Rylstone Fell. Faultless service and impeccably finished interiors set the stage for a meal to remember, with seasonal ingredients being served with all the flair you’d expect from a Michelin starred venue. Highlights when we visited in early summer included Hokkaido milk bread with butter, lardo and taramasalata, lobster with kombu and smoked pike roe, and a sublime savoury course of Tête de Moine with sablé, nectarine and sabayon. Holm, South Petherton, Somerset
With its raw plaster walls, Scandi design and plates of torched mackerel, turnip and buttermilk, or baked celeriac, truffle and hazelnut, Holm brings big city cool to rural Somerset. La Fosse, Cranborne, Dorset
Work up an appetite walking in the New Forest or Jurassic Coast before retiring to this intimate restaurant with rooms. Jöro, Sheffield
Close to Krynkl – the shipping container development where Jöro serves its creative dishes of scallop, grilled cucumber, mint and tiger’s milk, or halibut, sauce vin jaune, walnuts and mussels escabeche – the restaurant also operates House of Jöro, a boutique four-bedroom property. Guests can stay B&B, fold in a meal at Jöro or, for the ultimate in private dining, take over the whole house and enjoy an eight-course tasting menu cooked by chef-director Luke French.
