Homemade custard
This easy custard is rich with eggs and cream and flavoured with fresh vanilla. Make a batch for the family this weekend to go with your favourite pudding
Heat the oven to 190C/170C fan/gas 5. Mix together the apples, raisins, sugar, cinnamon and lemon zest and juice in a bowl with a small pinch of salt.
Lay a clean tea towel on your worksurface and then lay a sheet of filo on top and brush really well with melted butter. Put another sheet directly on top of this and brush again. Repeat with the remaining sheets and butter.
With the longest side of the filo facing you, spoon on the apple filling in a thick log, leaving a 4cm border nearest you, and also at the sides. Fold in the sides, then use the towel to help you roll the whole thing up into a fat log. Brush with a little more melted butter and put into the oven for 30-35 mins or until golden and crisp.
Leave to cool until just warm, then dust with icing sugar and serve with some lightly whipped cream.
