Whip up this Baileys ice cream, then check out our Baileys hot chocolate, Baileys brownies and more Baileys recipes. If you can’t get hold of any Baileys, use any Irish cream liqueur.

  • 600ml double cream
  • 397g condensed milk
  • 125ml Baileys
  • Baileys chocolate truffles or other boozy truffles to decorate, roughly chopped
    (optional)

Method

  • step 1

    Prepare a loaf tin by lining it with clingfilm, so you have an overlap on all sides. Use an electric whisk to bring the cream to soft peaks, then whisk in the condensed milk and Baileys until thickened slightly with a smooth consistency.

  • step 2

    Use a spatula to transfer the mixture to the prepared tin, levelling off the top. Freeze for 7 hrs or until set. If using chocolates to decorate, poke into the ice cream after 1 hr of freezing, then continue to freeze for 6 hrs. To serve, warm an ice cream scoop in hot water, dry and use to scoop.

Absolutely yummy. Used with baileys birthday cake flavour. No need to line any tin. Just get a tupperwear or ice cream rub, plop it in and freeze 😋

How long can you keep this on the freezer? Thanks.

Hi, thanks for your question. This is at it's best within about a week of freezing, however it would be fine to freeze for about a month if needed. Best wishes, the olive team.
