  • 220g self-raising flour
  • 1 tsp baking powder
  • 2 tsp mixed spice
  • 125g salted butter
    cold and cubed
  • 80g caster sugar
  • 125g mixed dried fruit
  • 1 large egg
  • 1 orange
    zested
  • 3 tbsp milk
  • 1 tbsp demerara sugar
    for sprinkling

    Method

    • step 1

      Heat the oven to 180C/160C fan/gas 4. Line a baking sheet with non-stick baking parchment. Tip the flour, baking powder and half the mixed spice into a bowl. Rub the butter into the flour until the mixture forms fine crumbs, you can also do this in the food processor.

      Stir in the caster sugar, a pinch of salt and dried fruit, then add the egg, orange zest and milk. Mix to a fairly firm dough. Spoon 12 rough blobs of the mixture onto the baking sheet, leaving room for a little spreading. Mix together the demerara sugar and remaining mixed spice and sprinkle over the cakes. Bake for 20-25 mins until golden brown.
