- 300g plain flour
- 100g golden caster sugar
- 2tsp baking powder
- 1tsp bicarbonate of soda
- 100g buttermelted and cooled
- 2 eggsbeaten
- 100ml milk
- 150ml soured cream
- such as Cox’s or Worcester Pearmain 3 small (about 300g) applescored and diced
- 50g pecansroughly chopped

Method
step 1
Heat the oven to 200c/fan 180c/gas 6 and line a 12-hole muffin tin with paper cases. Mix the wet ingredients quickly into the dry ingredients with the apples, pecans and toffee (don’t overmix – it should be a bit lumpy). Divide between the cases and bake for 25 minutes until risen and golden and cooked through.
