  • 250ml tonic water
  • 75ml gin
  • 2 limes
    1 zested, both juiced

Method

  • step 1

    Mix all of the ingredients with 50ml of water.

  • step 2

    Pour into a metal tray and freeze overnight.

  • step 3

    Remove from the freezer and scrape with a fork until you have a roughed-up texture.

  • step 4

    Put back in the freezer for an hour then repeat.

  • step 5

    Serve in small bowls.
