Fig bellini mixologist's tip:

  • We’ve used crémant for this, but you could use another sparkling white or rosé if you prefer.

Fig bellini recipe

  • 2 figs
    plus an extra slice to garnish
  • 30ml Frangelico
  • chilled sparkling wine
    for topping up

    Method

    • step 1

      Blend the two figs with the Frangelico until smooth, then push the mixture through a fine sieve to remove the seeds and skins.

    • step 2

      Divide the mixture between two champagne flutes or coupe glasses and top up with with the sparkling wine. Garnish with a fig slice, if you like.
