  • 750ml red wine (something unoaked is best)
  • 150ml cherry brandy or liqueur
  • 1 cinnamon stick
    plus extra to garnish
  • 2 star anise
  • 4 cloves
  • 2 small or 1 large oranges
    sliced
  • 100g soft light brown sugar
  • 3 small slices ginger
  • a generous grating nutmeg
  • 4 cardamom pods
    bruised

    Method

    • step 1

      Gently simmer all of the ingredients for 10 minutes without boiling. Leave to steep for 30 minutes. To serve, gently warm through and pour into mugs or heatproof glasses, and garnish with the extra cinnamon sticks.
