- Preparation and cooking time
- Prep:
- Easy
- Serves 2
- 1 tbsp assam tea leaves
- 2 tsp golden caster sugar
- 25ml bourbon whiskey (we like Woodford Reserve)per person (optional)
- lemon wedges and a sprig of mintto serve
Method
step 1
Put two handfuls of ice in a heatproof jug. Put the tea leaves into a teapot and pour over 200ml of boiling water, steep for 30 seconds then strain into the ice-filled jug and add the golden caster sugar. Allow to cool completely, stirring occasionally.
step 2
Pour the cooled sweet tea into tall glasses with more ice, lemon wedges and a sprig of mint, if you like. To make a boozy version, add bourbon whiskey. As iced tea is relatively light, a little goes a long way.
