Iced tea cocktail recipe

  • 1 tbsp assam tea leaves
  • 2 tsp golden caster sugar
  • 25ml bourbon whiskey (we like Woodford Reserve)
    per person (optional)
  • lemon wedges and a sprig of mint
    to serve

    Method

    • step 1

      Put two handfuls of ice in a heatproof jug. Put the tea leaves into a teapot and pour over 200ml of boiling water, steep for 30 seconds then strain into the ice-filled jug and add the golden caster sugar. Allow to cool completely, stirring occasionally.

    • step 2

      Pour the cooled sweet tea into tall glasses with more ice, lemon wedges and a sprig of mint, if you like. To make a boozy version, add bourbon whiskey. As iced tea is relatively light, a little goes a long way.
