English lavender is a herb similar to thyme or rosemary, so it’s a perfect addition to the on-trend coffee serve, espresso tonic. It’s refreshing, floral and perfect for summer. Try elderflower syrup if you don’t have lavender or spike it with a little gin for an extra kick."


How to make your own lavender syrup

  • Dissolve 5 florets (1 tbsp) lavender into 1:1 water and sugar (e.g. 1/2 cup water and 1/2 cup sugar) in a saucepan.
  • Simmer for 5 minutes, cool, then strain.

Lavender espresso tonic recipe

  • 30ml espresso (cooled) or strong cold brew
  • 15ml lavender syrup (more to taste) - buy online or make with fresh lavender!
  • 150ml carbonated tonic water
  • 15ml lemon juice
  • lavender sprigs
    to garnish

    Method

    • step 1

      Extract your espresso and let it cool or chill. Use store-bought or homemade lavender syrup (recipe above). Fill a glass with ice then add lavender syrup, tonic water and lemon juice. Add the cooled espresso and stir. Garnish with lavender sprigs.
