This makes more syrup than you will need. Store the remaining syrup in a sterilised bottle for up to a month. Use in more cocktails or keep in a pretty container and give as a gift.

MULLED SYRUP (MAKES 450ML)

  • 350ml red wine
    (we used chianti)
  • 300g granulated sugar
  • 2 cinnamon sticks
  • 1 orange
    halved
  • 1 tsp cloves
  • ½ tsp whole black peppercorns
  • 2 star anise
  • a few gratings nutmeg

OLD FASHIONED

  • 45ml bourbon whiskey
  • 15ml mulled syrup
  • 2-3 drops chocolate bitters
  • strip of lemon peel

    Method

    • step 1

      Put all the syrup ingredients in a large pan over a medium heat. Warm the wine until hot but not boiling, stirring until the sugar has melted. Remove from the heat and cover, leaving to infuse for 20 mins, then strain and leave to cool.

    • step 2

      Pour all the old fashioned ingredients over ice, stir and serve in a tumbler with a twist of lemon.
