Cajun prawns with pineapple salsa
These prawns tick so many healthy boxes – they’re really low fat and a good choice if you’re going the 5:2 diet.
Pour the gin, coconut rum and pineapple juice into a cocktail shaker. Add a handful of ice and shake until the shaker feels ice-cold. Strain into two glasses and serve. If you like, you can garnish with a wedge of fresh pineapple, or a coriander or mint sprig.
