  • 4 tbsp cocoa powder
  • 1 litre whole milk
  • a pinch (add a little extra if you like it spicy) chilli or cayenne powder
  • a generous pinch ground cinnamon
  • 3 tbsp caster sugar
  • 100ml single cream
  • 100g dark chocolate
    chopped
  • 4-6 tbsp extra-smoky mezcal or very peaty scotch whisky

    Method

    • step 1

      Put the cocoa in a jug and mix in just enough milk to make a paste. Put the rest of the milk in a pan and heat until simmering. Add the chilli powder and cinnamon.

    • step 2

      Whisk the hot milk into the cocoa paste until smooth, then pour back into the pan. Add the sugar, cream and chocolate, and heat gently, stirring, until combined. Stir in the mezcal or whisky and serve in mugs.
