
Vodka martini

Try this classic punchy cocktail from Kent's Updown restaurant, with an optional smoked eel gilda garnish to elevate

- 60ml vodka
- 10ml dry vermouth
FOR THE GARNISH (optional)
- 1 pickled green chilli
- 1 big green pitted oliveplus 10ml olive brine
- 1 small smoked eel fillet
Method

If using the garnish, wrap the chilli around the olive and eel, and spear through the middle with a cocktail stick.

Chill a couple of martini glass in the freezer for a few minutes. Pack ice into a cocktail shaker or small jug and pour over the vodka, vermouth and olive brine.
step 3
Stir with a bar spoon until icy cold – this will take a couple of minutes. If including, put the garnish into the glass and strain the vodka mixture on top.
