Semolina, a high-gluten flour made from durum wheat, has a coarse texture and often a yellow colour. Significantly higher in protein and fibre than regular all-purpose flour, it is often used for making fresh pasta, couscous (which is actually a type of pasta), or as a dusting for homemade pizza dough.
