Instant ramen noodle recipes
Packs of instant ramen are a brilliant storecupboard standby. Here are some quick and easy ways to give them a posh makeover

Lemongrass, chicken and ginger noodle broth
Bring 300ml water to boil in a pan.
Add 5 slices of ginger, 1 bashed lemongrass stalk, ½ a whole red chilli, a bruised clove of garlic and the seasoning packet from a pack of instant chicken ramen noodles.
Simmer for 5 minutes then scoop out all the aromatics with a slotted spoon and add the noodles, and cook for 2 minutes.
Add a good handful of chopped baby spinach and a small sliced and cooked chicken breast to warm through.
Spoon into a bowl and add lemon wedges and the rest of the chilli, diced small.
Sriracha peanut ramen noodles
Cook a pack of instant veggie ramen noodles following the pack instructions, adding the seasoning from the packet.
Mix 1 tbsp peanut butter, 1 tsp sesame oil, 1 tbsp soy sauce, 1 tbsp sriracha in a bowl with 1-2 tbsp boiling water until you have a loose sauce.
Tip in the noodles and toss to coat.
Serve topped with sliced cucumber, sesame seeds, chopped toasted peanuts, sliced spring onions and more sriracha.
Instant Thai coconut noodles
Fry 1 tbsp Thai red curry paste in a non-stick pan, then add ½ tin of reduced-fat coconut milk (freeze the rest) and bring to a simmer.
Add the seasoning from a pack of instant veggie ramen noodles along with 100ml water, and heat.
When boiling, drop in the noodles and cook for 2 minutes.
Add a handful of mangetout, baby corn and cooked peeled prawns.
Finish with a splash of fish sauce and top with lime wedges and coriander.
Breakfast ramen noodles
Cook a pack of instant veggie or chicken ramen noodles following the pack instructions.
Drop an egg into boiling water and cook for 7 minutes.
Rinse under cold water and peel.
Grill 2 pieces of streaky bacon.
Heat a small frying pan with oil and brown a handful of sliced shiitake mushrooms.
Tip the noodles into a bowl and top with the halved egg, mushrooms, bacon, a few chives or spring onions and a drizzle of tonkatsu or HP sauce.
Instant ramen po'boy prawn sando
This sandwich takes inspiration from the katsu sandos of Japan, and the Louisiana po’boy. The prawns are also great canapés on their own, if you don’t fancy a sandwich.
Crispy noodles with egg
This makes a great speedy breakfast if you fancy something filling but still packed with flavour, which comes from the crispy chilli oil.
