This recipe for banana and oat breakfast muffins is so delicious that they feel like a treat, but they're each under 200 calories. Make a batch now and you'll have a healthy breakfast all week.

- 250g self-raising flour
- 1 tsp baking powder
- ½ tsp bicarbonate of soda
- 100g light brown muscovado sugar
- 2 large or 3 small bananasmashed
- 2 eggs
- 125ml buttermilk
- 75g melted butter
- 3 tbsp oats

Method
step 1
Line a 12-hole muffin tin and heat the oven to 190c/fan 170c/gas 5. Sift the dry ingredients into a bowl. Mix the bananas, eggs, buttermilk and butter, then add to the dry mix with a pinch of salt. Fold it together lightly and quickly. Don’t worry if the mixture looks lumpy – keep going until it is smooth and your muffins will be tough. Spoon into the muffin cases and sprinkle on oats. Bake for 20 minutes, then cool on a wire rack.
