What

Tagine is the name of the dish as well as the traditional earthenware pot that is used to cook the dish in. The tagine pot has a wide shallow base on which the food is placed, then this is topped with a tall conical lid which acts to collect steam as the food cooks, which helps to intensify the flavour.

Though these pots are beautiful objects, they aren’t very practical for modern kitchen use so it’s much easier to use a heavy casserole pot or similar for cooking your tagine recipes.
