  • 1 garlic clove
    crushed
  • juiced to make 2 tbsp lemons
  • pinch saffron
  • 150g mayonnaise
  • 1 tsp Dijon mustard
  • lemon juice

    Method

    • step 1

      Put the garlic in a small bowl with the lemon juice and season with a good pinch of sea salt. Put a pinch of saffron in a serving bowl, add 1 tbsp of just-boiled water and leave for 5 minutes. Add the mayonnaise and mustard to the saffron. Sieve this over the lemon juice, leaving the garlic bits behind. Mix everything together really well.

    Serve your aioli with hot homemade chips.
