  • 2 whole artichokes
  •  2 lemon
  • 100g butter

    Method

    • step 1

      Cook the whole artichokes in simmering water with half of one of the lemons for 40 minutes. Drain well.
      Melt the butter and whisk in the zest and juice of a grated lemon and put into a bowl for dipping. Eat by dipping the leaves. when you reach the centre, scrape out the hairy choke before eating the heart.

      Holding the body of the artichoke firmly, trim off the stalk with a sharp knife.

    • step 3

      To get to the heart, pull off all the large leaves surrounding it.

    • step 4

      Trim off any smaller leaves and remove the pointed end.

    • step 5

      Scoop out all of the hairy choke fibres using a teaspoon.

    • step 6

      Cook the prepared hearts whole in boiling water with salt and lemon before using them in the recipe of your choice.
