Buffalo chicken mac ’n’ cheese

Heat the oven to 220C/200C fan/gas 7. In a large bowl, whisk together the cheese, hot sauce and soured cream with a pinch of salt and a good twist of pepper. Crumble in half of the blue cheese, all the onion granules, chives, chicken and white parts of the spring onions. Mix well.
Scoop the mixture into a deep baking dish and sprinkle over the remaining blue cheese and mozzarella. Bake for 20 mins, finishing under the grill for 3-5 mins for a golden top.
Leave to sit for 10 mins before serving with celery, tortilla chips and pretzel bites for scooping.
