Crisp parmesan chicken with garlic & lemon broccoli
Easy midweek meals often involve chicken. This crunchy breaded chicken recipe with a side of fresh lemony broccoli is easy to make on a weekday.
Heat the oven to 220C/200C fan/gas 7. Bake the goujons for 15-20 mins or according to pack instructions. In the final
5 mins, sprinkle over half the parmesan and return to the oven until crispy and golden.
Meanwhile, melt the butter in a small pan. Once foaming, add the garlic, stirring well. Add a little salt and pepper.
When the chicken is cooked, stir the parsley into the butter then drizzle over the goujons and shake well to coat. Sprinkle over the remaining parmesan and a few extra parsley leaves, if you like.
