
Cucumber raita

This gently spiced raita is a speedy dip that looks fancy. Serve it with warm pittas for a great nibble or ideal starter

- ¼ large cucumberhalved and seeds scooped out
- ¼ red onionfinely chopped
- ¼ green chillifinely chopped
- 150g greek yogurt
- ½ tsp ground cuminplus extra to serve
- 2 tbsp mintchopped
Method

Cut the cucumber into small dice and drain on kitchen paper before mixing it with the onion, chilli, greek yogurt, cumin and mint. Season really well with sea salt. To serve, sprinkle over a little more ground cumin if you like and serve with warm pittas.
