Lemon meringue pie spoons

- 50g digestive biscuits
- 100g lemon curd
- 50g crème fraîche
- 1 egg white
- 60g caster sugar
Method
step 1
Put the biscuits in a plastic sandwich bag and bash with a rolling pin until you have a rough crumb mixture.

Divide three quarters of the biscuits between the bottoms of the spoons.
step 3
Mix together the lemon curd and crème fraîche. spoon on top of the biscuits and then scatter over the remaining biscuits. Keep to one side.

Whisk the egg white in a bowl until you have soft peaks. add the caster sugar and continue to whisk until you have a thick, spoonable meringue. Spoon or pipe a swirl of meringue on top of the biscuit crumbs and put the spoons on a baking sheet.

Grill for a minute or so until they just begin to colour. Leave to rest for a few minutes until the spoons are cool enough to hold and then serve.
