  • 6 figs
    quartered
  • 2 tbsp sherry vinegar
  • ½ tsp Dijon mustard
  • 3 tbsp olive oil
  • 1 tsp runny honey
  • 50g rocket
  • 1 ball mozzarella
    torn into pieces
  • 6 slices serrano ham
  • a small handful of leaves basil

Method

  • step 1

    Put the figs cut-side up on a plate. Whisk the vinegar and mustard, then gradually whisk in the olive oil and honey. Season, then spoon over the figs and leave at room temperature for 20 minutes.

  • step 2

    Divide the rocket, mozzarella and ham between 2 plates. Spoon over the figs and dressing, then finish with a few basil leaves.
