Cheese and onion giant crumpet toastie
These crumpet toasties are packed full of cheese and red onion chutney. Super easy, this recipe is great for a quick flavoursome lunchtime meal
Whisk together the honey and vinegar with a good pinch of chilli flakes. Put the pear slices on a plate, spoon over the honey pickle and leave for a few minutes.
Spread one side of each slice of bread with a very thin layer of mayo. On two of the slices, add a layer of brie then slices of pickled pear, ham and then top with the remaining two slices of bread to make two sandwiches.
Spread the outside of the sandwiches with butter then lay in a hot non-stick pan and cook until deep golden and crisp. Flip and cook the other side of each sandwich until golden and the cheese is really melty.
