Brie, ham and honey-pickled pear toastie recipe

  • 2 tsp honey
  • 2 tsp cider vinegar
  • pinch of red chilli flakes
  • 1 ripe pear
    sliced
  • 4 thick slices of dense bread
  • 1 tbsp mayonnaise
  • 100g brie
    cut into 6 thick slices
  • 110g roast ham
    cut into 4-6 slices
  • butter
    softened

Method

  • step 1

    Whisk together the honey and vinegar with a good pinch of chilli flakes. Put the pear slices on a plate, spoon over the honey pickle and leave for a few minutes.

  • step 2

    Spread one side of each slice of bread with a very thin layer of mayo. On two of the slices, add a layer of brie then slices of pickled pear, ham and then top with the remaining two slices of bread to make two sandwiches.

  • step 3

    Spread the outside of the sandwiches with butter then lay in a hot non-stick pan and cook until deep golden and crisp. Flip and cook the other side of each sandwich until golden and the cheese is really melty.
