Use up all your Christmas leftovers in this epic sandwich, a luxurious marriage of rich brie and thick ham with sweet pear and honey

- 2 tsp honey
- 2 tsp cider vinegar
- pinch of red chilli flakes
- 1 ripe pearsliced
- 4 thick slices of dense bread
- 1 tbsp mayonnaise
- 100g briecut into 6 thick slices
- 110g roast hamcut into 4-6 slices
- buttersoftened

Method
step 1
Whisk together the honey and vinegar with a good pinch of chilli flakes. Put the pear slices on a plate, spoon over the honey pickle and leave for a few minutes.
step 2
Spread one side of each slice of bread with a very thin layer of mayo. On two of the slices, add a layer of brie then slices of pickled pear, ham and then top with the remaining two slices of bread to make two sandwiches.
step 3
Spread the outside of the sandwiches with butter then lay in a hot non-stick pan and cook until deep golden and crisp. Flip and cook the other side of each sandwich until golden and the cheese is really melty.
